Giant Brownie Cupcake with Peanut Butter Frosting

My beautiful friend had a 1950's Hollywood murder mystery party and I made the dessert. My first giant cupcake!

I wasn't the murderer but I did do an awful awesome "ill defined foreign accent" haha!

She requested chocolate brownie cupcake with peanut butter icing! Delish!

I got the cupcake recipe from here, but had to multiply it by 3.5. Immense amount of batter but worth it.

The peanut butter icing is from this great blog by Crazy Cupcake Gem!

I'm not gonna lie, it was slightly too rich for me but then I'm not a huge fan of peanut butter but if you like it then you'll loooooooove this.

Just a note: Don't leave your giant cupcake next to an oven that's on while your eating the main course because you'll have a melty drippy mess on you!

I'm back and feeling happy. Happy baking!

  2. I've always wondered what it would be like to bake a giant cupcake. I've avoided it so far because I feared I'd eat it all. Is there an Oscar for 'ill defined foreign accent'? There should be. Glad to see you back.

  3. Thanks Lottie, Jo and Phil.

I'm glad to be back. It did take me pretty much all day to make because I underestimated how much batetr I would need so I kept having to mix up come more. It also takes an hour to bake each part but it does have the wow factor!

  8. I'm extremely curious about how the middle of the cupcake came out! I wanted to try this exact project, but was a tad skeptical about the center of the brownie being able to fully cook.
How long did you bake it for and at what temperature, may I inquire?

  9. Thanks for your comments everybody. I pretty much use this brownie cupcake recipe everytime I make a chocolate cupcake, I just think the chewyness is great!

Fiona - I had this thought to so I went for a lowish temp, 170C and cooked it for 1hr and 15mins. I kept checking it at the 50 min mark and put a piece of foil over it so the top wouldn't burn. There was a hollow bit at the top when it came out but luckily this was cut off to fit the lid on top - I think it was due to opening the door to often. Hope that helps.
